This is for part of my uni coursework and would love it if someone out there with a bit of knowledge in this field could pass on an accurate ball park figure for the design and build of an e-commerce site for companies as big as Topshop or Urban Outfitters

Do you only mean the design and programing bill, without the hosting?
If so, a senior web agency will probably cost you between 5000 and 7000 euro, being a more complex website.
If you buy an already made e-commerce platform and use some IT & design students it will cost less.
